Step 1: Identifying the Optional Ingredients of Yellow Gravy:
Yellow Gravy (historically known as Pili Gravy) is a classic Mughlai mother gravy known for its rich, golden hue and velvety texture.
• Optional Ingredients: A pinch of premium saffron (kesar) soaked in warm milk is added to impart a rich, royal golden hue and delicate floral aroma. Additionally, a small quantity of whisked yogurt (dahi), fresh cream, or grated khoya can be added during the final simmer to adjust the richness and tanginess of the gravy.
Step 2: Precaution 1 --- Precise Sweating/Boiling of Onions:
The base of yellow gravy is made from pureed onions. These onions must be boiled or gently sweated in fat without allowing them to brown or caramelize. If the onions are caramelized, the natural sugars will darken, turning the final gravy into a dull, muddy brown color rather than a bright, clean, sunny yellow.
Step 3: Precaution 2 --- Preventing Scorching of the Nut/Seed Paste:
Yellow gravy is thickened using a dense paste of cashew nuts and melon seeds (magaz paste). These nut pastes are rich in heavy starches and proteins that sink to the bottom of the cooking pan and burn easily. Therefore, the gravy must be simmered on a very low flame and stirred continuously, preferably using a heavy-bottomed pan, to prevent the paste from scorching and ruining the flavor of the gravy.
