Portland cement contains different clinker phases.
The important phases are:

The phase \(C_3A\), also called tricalcium aluminate, reacts very rapidly with water.
This rapid reaction causes quick setting of cement.
To control this quick setting, gypsum is added during cement grinding.
Gypsum slows down the hydration of \(C_3A\) and controls setting time.
